Hillbark Hotel host wine tasting evening

The Contessa Hotels Group and Atlas Fine Wines joined forces to host a food and wine extravaganza for 20 hand selected guests. The event was held in the splendour of the Contessa Hotels owned Hillbark Hotel cellar in Frankby.

Atlas Fine Wines Ltd is a privately funded fine wine company based in the City of London, with a subsidiary in Switzerland, and provides a specialist service and advice to fine wine collectors.

Each guest was treated to a champagne reception, followed by a number of carefully chosen flights of fine wine. Each flight was served with food to match from the Hillbark Hotel ‘Riviera’ menu. Champagne de Sousa 3A was served with marinated beetroots and green lentil and apple salad. Two stunning white wines (2007 Riesling, Cuvee ‘Frederic Emile’, Trimbach and 2010 Meursault, 1er Cru ‘Poruzots’, Antoine Jobard) were then served with carpaccio of Yellowfin tuna, octopus in lemon oil, crab and avocado salad and warm prawns. Between courses venison carpaccio and pata negra ham were served.
The main course consisted of roast leg of lamb with spiced couscous, beef wellington and suckling pig. These were served with an outstanding selection of red wines from Piedmont (2005 Barolo, ‘Ravera’, Cogno; 2005 Barolo, ‘Cascina Francia’, Giacomo Conterno; 2005 Barbaresco, ‘Rabaja’, Bruno Giacosa). This was followed by a selection of cheeses, served with three world famous clarets (1996 Chateau Leoville-Barton; 1996 Chateau Leoville-Poyferre; 1996 Chateau Leoville-Las Cases).

To round off, lemon sorbet with iced vodka was served, followed by fried brioche with cinnamon and spiced ice cream, chocolate mousse, passion fruit posset with tropical fruit and vanilla crème brule. The final wine of the night was the sumptuous 2012 Primitivo di Manduria ‘Es’ from Gianfranco Fino.
